Why is the February post about pancakes? Excellent question!

In the UK, there is a February holiday called Shrove Tuesday. On Shrove Tuesday, people are trying to use up all of their eggs and milk before the start of Lent, so they make pancakes! The day has become a popular festival, with traditions such as Pancake Races across the UK.

A similar religious tradition of cooking pancakes and rich foods before Lent is known in France as La Chandeleur and in the southeastern USA as Mardi Gras.
